6 whole eggs
2 cups spinach
1 cup mushrooms
½ onion
2 oz goat cheese
1 bell pepper
garlic powder

1) Prep ingredients – finely chop spinach, dice mushrooms, onion and bell pepper
2) Spray muffin tin with non stick spray and pre-heat oven to 350 degrees
3) Whisk eggs in a bowl and season with garlic powder and oregano (or your favorite spices)
4) Mix chopped spinach, diced mushrooms, onion and bell pepper in a separate bowl, and add to each muffin tin
5) Pour egg mixture into muffin tin, filling each cup half-way
6) Bake for 20 minutes, or until a toothpick comes out clean when poking egg puff
7) Remove from oven and top with goat cheese
8) Enjoy!

Puffs can be re-heated by placing in microwave for 30 seconds.
