4 oz lean ground beef
½ onion diced
1 tomato diced
2 cups chopped romaine lettuce
2 oz shredded low-fat cheddar cheese
¼ cup non-fat greek yogurt
½ cup salsa
2 tsp cumin
2 tsp smoked paprika
1 whole wheat tortilla

1) Pre-heat oven to 350 degrees and bake tortilla for 5 minutes or until slightly browned
2) Cook ground beef on stove top skillet using medium heat for 4-6 minutes until fully cooked
3) Mix diced onions, cumin and smoked paprika into ground beef. Add 2 tbsp of water for moisture
4) Toss chopped lettuce and diced tomato in a bowl
5) Top salad with ground beef, shredded cheese, small pieces of baked tortilla, dollop of greek yogurt and salsa
